Most restaurant software is a website. When the broadband drops, the line goes down, or the provider has a bad night, billing stops — during service, with a full floor. Restaurants end up writing bills on paper and typing them in afterwards.

Backups, including your own Google Drive
A restaurant's sales history usually exists in exactly one place, on one computer, in a kitchen. Backups are treated as a first-class part of the product rather than a setting.
Local first
A USB drive or a network folder in the same building, on an automatic nightly schedule with a catch-up if the machine was switched off.
Off-site, to your account
Optionally connect the restaurant's own Google account. Backups upload to a folder the application creates in that Drive.
Narrow access by design
The application asks Google only for access to files it creates itself. It cannot see, read or touch anything else in the account.
Verified, not assumed
Each upload is checked against Google's own checksum before it counts as a backup, and the screen says plainly when a connection needs renewing.
